Our Story

We are Gallette Chocolates and we’ve been making chocolate with purpose since 2011. We believe that eating good chocolate goes beyond the delicious tasty experience. We dream about a world where people care about each other and where there are much more opportunities to develop individual potential. For this reason we produce bean to bar chocolates with cocoa cultivated in Brazil, in farms that respect employees and use sustainable environmental practices.

Purpose

For us, it is impossible to thrive as a business if we imagine that our products cause harm to anyone in the supply chain. We do not accept any profit that sacrifices children or causes harm to the planet. We always source cocoa from producers who do not employ child or slave labor.

How we source our beans

We work directly with the producers who grow. Ferment, and dry the cocoa we buy. 90% of this cocoa comes from a Brazilian farmer, called Santa Teresa, located in the Atlantic Forest, south of Bahia, who maintain the forest in a system called Cabruca.This system in an agroforestry sustem in which trees native to the region are used to provide shade to cocoa trees without deforestation.
10% of the cocoa we buy from small producers who maintain the same commitment to quality and sustainability.

Bean to Bar movement

Gallette Chocolates is one of the chocolateries that has joined the Bean to Bar movement, where we produce chocolates with Brazilian Cacao. We take pride in our artisanal production, which makes all the difference in the final result. That’s why the packaging of this exceptional chocolate indicates the bean and the farm of origin. It’s a more natural, sustainable production that results in a much more exclusive flavor.

BEAN TO BAR

"Bean to Bar" or "Almond to Bar" chocolate is a relatively new movement, started in America approximately 10 years ago. Here, chocolatiers select cocoa seeds and produce their own chocolate.

One of the main reasons for the growth of this movement is that, producing your own chocolate, gives chocolatiers control over flavor and quality, giving exclusivity to their creations, as well as in the wine and craft beer production processes.

Gallette joined the movement and produces a line of exclusive bars and chocolates.
